ALL CAPS! Classic American Pilsner harkens back to a Silver Age of American Lager brewing when the highest quality ingredients and focus on flavour and drinkability prevailed.
Tasting Notes: Corn-like sweetness is balanced out with a massive dose of Czech Saaz hops for bitterness and American Cascade hops for flavour and aroma. Full, rich malt and hops dominate but are complemented by distinctive grainy sweetness only maize can provide.
Chen Pi (陈皮) is sun-dried Mandarin orange peel - a traditional Chinese cooking ingredient - with subtle and nuanced flavours of warm spice and bitter Orange pith.
Tasting Notes: They brewed with Extra Pale malt, Wheat, Oats and Dextrose to give a full body with plenty of haze, added Chen Pi into the whirlpool with the first hop additions of Citra, Amarillo & Vic Secret, and the Chen Pi work its magic. To balance out the bright, bitter notes from all the hops and Chen Pi, they then added 25L of Watermelon juice concentrate post-fermentation. Giving a boost of fruity sweetness to balance out the Mandarin peel, the result is an exceptionally well-balanced IPA with an incredible flavour profile - and a true marriage of East & West Craft brewing!
Pale, Carapils and Caragold create a light body, Columbus hops used on the bittering end and Citra and Vic Secret as late hops and dry hops bring the juicy flavours.

This beauty returns for a second iteration! They were so pleased with this lactose-free NE IPA when we brewed it over the summer, that it's making a welcome return to our Seasonal lineup.
Tasting Notes: It's a huge, hazy NE IPA with loads of wheat & oats in the grist to give a lovely thick body. Enigma & Mosaic hops are added initially in the Whirpool, before being triple-dry hopped at 10 grams per litre....the result is a sensational aroma & juicy hop character, hung off a thick, pale malt body with plenty of depth.
Following their Oktoberfest beer, How 'Bout Dem Apples is the second beer released in the Autumnal seasonal range. It's a big, 6.9% ABV Apple Smoothie IPA!
Tasting Notes: Extra Pale Malt, Wheat & Flaked Oats in the grist give a lovely thick, hazy body, with a boost of lactose to thicken it. They added 40kg of Kentish Bramley apples into the boil, then pumped the beer post-fermentation with another 80 litres of unpasturised fresh-pressed Bramley Apple juice. Followed up with a big dry-hopping of Cascade, Amarillo & Citra. Thick, pale, fruity as hell and with a big fresh hop-character....let's see how you like Dem Apples!
The latest addition to the core range is Little Victories, a session IPA brewed with Pale, CaraPils and Wheat malts, Dextrose and Lactose provide the body.
Tasting Notes: Amarillo, Mosiac and Simcoe hops for the bittering and flavour. Fermented with their house ale yeast. Think super juicy and fruity, well balanced and sessionable!
They used a strain of wet Mexican lager yeast, flown over from their friends White Labs, CA. It's fair to say that over the summer they've become kind of obsessed with the character imparted by this yeast!
Tasting Notes: Pairing the yeast with the light, clean floral aromas of Liberty hops, and with a malt bill including Cara Munich, Vienna & Extra Pale malts, the result is a clean-drinking, copper-coloured lager with low esters & light fruity characters. Drink a bottle & feel like a Luchador!
Rider Pale Ale is a generously hopped pale ale that is highly aromatic and finishes crisp and dry. Its subdued malt profile, clean yeast strain and lower alcohol levels provide a showcase for the aromas and flavours of citrusy American hops.
This seasonal Dunkelweiss comes courtesy of the newest addition to the Mondo Brewing team: Josef Adam, fresh from the foothills of Bavaria!
Tasting Notes: This brew uses 50% wheat malt in the grist - an even mix of Dark and Pale Wheat malts. Hopped with Hallertau & Saaz, fermented out with a Bavarian yeast strain to give all the lovely aromas of banana and cloves, this is a classic Dunkelweiss full of toffee and caramel flavours, with a subtle Noble hop profile. Perfect for the darkening Autumnal evenings! Prost!
The fruit of a cracking time they had in Copenhagen, brewing with the magnificent beasts from Brus in their brewpub. They only got a few kegs sent over, and this beer is now limited to the Taproom only...come by & see what the fuss is about!
Tasting Notes: A big, zippy IPA, with crushed corriander seed to give a subtle note of spice and depth, followed by loads of Yuzu juice, firstly into the fermenter, then finished off during the conditioning period.
