Beyond Modus III 8.0

After an initial period of ageing, with wild yeasts, we blend a batch of Modus Operandi, we then age this blend for a further 4 months in some exceptional Burgundy red wine barrels, hand-picked to be the perfect vessels for this beer.

Tasting Notes: As this is 'Beyond Modus' we blend in a couple of select beers from our barrel library. We think these add extra character, depth and complexity to the blend, to make it the finest barrel-aged beer we have achieved so far. We expect this beer to age very well for a number of years.

Bibble 4.2

Brewed with Vienna Malt and Oats, an amazing mouth filling malt base. Hopped with beautiful Mosaic hops, renowned for their tropical fruit beauty, helped along with some nice orangey Amarillo hops.

Tasting Notes: A moreish bitterness is complimented by tropical fruit tastiness.

Billionaire 10.0

An imperial stout was brewed with lactose, sea salt, caramelised miso paste and tonka beans, this is a whole new take on ‘a decadent stout’. A direct descendant, or rather an older relative, of our salted caramel chocolate stout Millionaire.

Tasting Notes: Intense and velvety the umami character shines through in Billionaire where salinity and a lactose body is matched by the intense umami on the miso paste. With a long, warming bear hug of a finish this is a beer to be sipped and savoured.

Breakfast of Champignons 4.1

Punny Bum mushrooms and cracked black pepper.

Tasting Notes: Mushroom Earthiness, Cracked Blacked Pepper, Toasted Oak

Brettbrett Double IPA 8.4

A super crisp and fresh double IPA, extremely well-attenuated, allowing all the hop character to come to the fore.

Tasting Notes: Brettanomyces, Citrus, Pine, Tropical

Epic Saison 5.0

This Farmhouse Ale is a transcontinental fusion of Belgium’s eclectic beer culture and the feisty Sorachi Ace hops of North America, brought to life with by West Country artisanal brewing wizardry.

Tasting Notes: On the nose, the hops deliver a big splash of tropical fruit, followed by ripples of well-seasoned spiciness. In the mouth a tangy, bittersweet fruitiness holds sway, while tangerines tap dance their way across the tongue in the finish.

Evolver IPA 5.8

Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

Tasting Notes: Tropical fruit, Farmyard Funk, Dry

Fresh 5.5

A pale ale, made with northern and southern hemisphere hops.

Tasting Notes: A frisky, fragrant pale ale. Ctirus, Hops, Refreshing

Gazillionaire 4.7

Like its brother 'millionaire' but with added vanilla and cardomom.

Tasting Notes: Cocao, Vanilla, Cardamom

Madness IPA 6.8

A version of the 'West Coast' IPA - the beer that sparked a revolution.

Tasting Notes: Open the bottle to a tropical punchbowl of aromas, as this beer is all about the hops. There are masses and masses of late hops and dry hops to maximise the beautiful flavours and aromas, so you can experience wave after wave of tropical and citrus fruits.

Millionaire 4.7

Sometimes a drink can make you feel so decadent it's like you're a millionaire; this beer wraps you in a velvety cocoon, dresses you in a smart suit and takes you out for a special night on the tiles.

Tasting Notes: Sweet and salty collide in this rich, balanced and smooth dessert stout. Lactose, caramel and high quality Valrhona cocoa nibs provide a chocolate and caramel backbone alongside the roasty malts whilst the Cornish Sea Salts gives a savoury salty kick, raising this beautiful beer above the norm.

Modus Operandi 7.0

A transformation of an old English ale into a beer that is Wildly different.

Tasting Notes: A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

Ninkasi 9.0

Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style Saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast.

Tasting Notes: On the nose there’s a bouquet of playfully aromatic notes. Take a sip and enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Of the Sea 7.0

Lobsters, cockles, seaweed, sea salt, and sea herbs.

Tasting Notes: Shellfish in the form of cockles and lobsters, foraged Kombu and dulse seaweeds and sea herbs seasoned with Cornish sea salt, saffron and star anise. There is a briny hit and rich smoothness which accentuates the taste of the sea.

Pogo 4.0

This beer combines a boldly hopped pale ale, brimming with Tropical fruit character from southern hemisphere hops.

Tasting Notes: These flavours and aromas are then augmented by adding 3 of Brett’s favourite fruits: Passion-fruit, Orange and Guava. Refreshingly light bodied and perfect for enjoying in the sunshine that is just around the corner.

Redwood 5.8

This is a progressive beer which will vary year to year based on the forgeable fruits available and how long they have spent in barrels before culminating in a crescendo of sweet fruits, roasted oak and vibrant acidity.

Tasting Notes: Red Berries, Bright Sherbet, Lightly Toasted Oak

Shnoodlepip 6.5

A collaboration of three brewers, three nationalities and six ideas brought together to learn, experiment and enjoy. Made by Kelly Ryan from Good George Beer in NZ, Brett Ellis from the Wild Beer Co, and Mark Tranter from Burning Sky Brewery.

Tasting Notes: Full body, gentle-sweet spiciness, a dry depth with oak undertones, and tropical fruit character, all finished off with tangy Hibiscus flowers – this is one shnoodlepippin beer!

Sleeping Lemons 6.0

Hibernating Lemons comes in at a much more festive 6% lending a bigger, maltier body to the beer.

Tasting Notes: The fuller mouthfeel and warming alcohol bring decadent flavours of lemon meringue pie to the character of this beer and the acidity is more rounded and reminiscent of lemon curd.

Smoke 'N' Barrels Autumn 6.0

This is a beer to drink post barbecue, scarfs on, stomping against the chill and watching fireworks on a starry night sky.

Tasting Notes: With the last apple pressing days, dry leaves underfoot and the whiff of bonfires at every corner this beer sums it up, from sweet smoke, warming malt sweetness and hints of apple.

Smoke 'N' Barrels Spring 4.7

A smoked lager from their home built smoker using retired 500L sherry butts to infuse malt with cherry wood smoke, rosemary and sage.

Tasting Notes: Delicate, sweet smokiness with a hint of the herbaceous - as refined and crisp as you could wish for.

Smoke 'N' Barrels Summer 4.0

Summer Ale, barrel aged with smoked orange gose. The base beer, containing smoked malt, developed in barrels over many months, quietly gaining acidity and complexity.

Tasting Notes: The resulting beer is full of juicy zestiness and mouthwatering acidity while the smoked sea salt provides a decadent mouth feel and salinity. Refreshing and complex in the same mouthful the vibrancy of the citrus contrasts the delicate sweet smoke from both cherry wood and oak.

Smoke 'N' Barrels Winter 7.4

Smoke ‘n’ Barrels is all about incorporating local ingredients and also smoking malts with various varieties of wood. For a true taste of Somerset winter we smoked local sloes with liquorish root.

Tasting Notes: Intense and rich, the base Belgian Dubbel base is packed with date, fig and dried fruit character. It was also finished by filling one of our new red wine foudres straight from California. The vineous wood character increases the decadent delight even further.

Somerset Wild 5.0

A beer with the acidity levels of a white wine or farmhouse cider, with a depth, complexity and refreshing drinkability to it that makes it a wonderful beer to pair with food.

Tasting Notes: Sour, Homemade lemonade, Brigh Acidity

Sourdough 3.6

A Wild Beer & Hobbs House Bakery collaboration.

Tasting Notes: There is a lovely gentle rounded fruity sourness to this beer. It isn't harsh, and its low alcohol makes it the perfect brunch beer to enjoy with smoked salmon and scrambled eggs on some Hobbs House Bakery Sourdough. Serve chilled.

Wild Goose Chase 4.5

The "all-day" wild beer, tart and fruity, but well-hopped and drinkable.

Tasting Notes: Juicy, tart gooseberries and out own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

Wildebeest 11.0

An Imperial espresso chocolate vanilla stout, Wildebeest is a judicious selection of pale and dark malts to which is added the highest quality Valrhona cocoa nibs and freshly roasted Columbian coffee.

Tasting Notes: The vanilla pods add something a little special to the character of the beer. Helping produce an elegant, creamy, soothing confection of aromas and flavours. It’s like a rich dessert in a glass.
