CELIA benefits from Zatecky Pivovar being the only brewery in the world to brew with 100% Saaz noble hops as they are grown locally in Northern Bohemia’s mineral-rich red soil. The combination of the dark red soil, rich in ferrous oxide (which retains water) and climate allows the region to produce the award-winning crop. The geology of the Czech Republic – high moisture levels in the soil and hilly terrain provides the ideal environment for the growth of brewing ingredients and hence the long history of brewing in the region.
The Žatec region is considered to be one of the oldest brewing regions in the world with documentation of a beer tax paid by a Zatec brewery in 1004 AD. With such a long history of brewing and the highest beer consumption per capita in the world – the Czechs know a thing or two about brewing quality beer.
Saaz is the champagne region of lager brewing as the local hops produce a beautiful clean, spicy bitterness which combined with the lack of gluten and natural carbonation makes CELIA an ideal accompaniment to quality food, something that has driven sales as restaurant owners discover that it is not only wine can be matched with food.
All the malted barley is two-row spring barley grown in Moravia, a region between Bohemia and Slovakia which is famed for its lush fertile soil enriched by a seven-strong lattice of rivers. The water however comes from the Zatec foothills, it is sourced and sand-filtered from 15m below the brewery cellars.
The Zatec brewery combines the height of Czech brewing knowledge and traditional methods with the latest technology and modern innovation. The brewery works closely with the famous Research Insitutute of Brewing and Malting alongside the Hop Research Institute. One of the fruits of this winning combination of traditional techniques and modern innovation is CELIA lager. Tomas Lejsek, previous head of the Czech Brewing and Research Institute, spent 3 years developing the patented deglutenisation process that makes CELIA possible. Enzymes are used to remove the gluten during fermentation utilising the unique temperature stability provided by the walls of the 14th century Zatec castle, in which CELIA is brewed.
